Grams' Pumpkin Pie
I don't know what it is, but every year as the leaves begin to change colour everyone seems to go mad for pumpkin spice. It's in your coffee, it's in your tea, it's in your cookies, candles, soap....I think I even saw it in dog cookies. (umm, why?) There has to be a reason, so I thought it might be wise to address the root of the madness...the actual pumpkin pie. The spices make the humble pumpkin sing and have thus proved that the mighty squash has more purpose than bearing a carved, crooked grin on October 31st. This recipe is from my mother in law and has found a home in our recipe box. Enjoy! 🎃.....sorry, 🥧
Ingredients

Single 9" pie crust, unbaked
2 eggs
2 cups of Pumpkin Puree
3/4 cups of packed brown sugar
1 tsp cinnamon
1/2 tsp ginger
1/2 tsp allspice
1/2 tsp nutmeg
1/2 tsp salt
1 & 1/3 cups light cream
Directions
Preheat oven to 425˙F. Beat eggs lightly then beat in pumpkin puree, sugar, spices and salt. Pour mixture into prepared pie shell and bake in preheated oven for 15 minutes. Turn oven down to 350˙F and bake until set, about 45 minutes or until a toothpick inserted into the centre comes out clean.
Let cool and serve with whipped cream if desired.
